California Dreamin’ Citrus Shrimp Ceviche
Ingredients
- ¾ cup chopped mango
- ¾ cup chopped tomato
- ¾ cup chopped cucumber
- ¾ cup chopped red onion
- ¾ cup cooked shrimp, chopped
- Grated frozen jalapeño, to taste
- Handful of chopped cilantro
- Salt, to taste
- Juice of 1 lime
- ¼ cup Shasta California Dreamin’ Soda or Shasta Zero Sugar California Dreamin’ Soda (for a low-calorie alternative)
- Lime slices, for garnish
- Tortilla chips, for serving
Directions
In a large bowl, add the chopped mango, tomato, cucumber, red onion and shrimp. Add grated frozen jalapeño according to your spice preference. Add chopped cilantro, salt, and lime juice. Pour in either Shasta California Dreamin’ Soda or Shasta Zero Sugar California Dreamin’ Soda. Mix everything gently until well combined. Let it chill in the fridge for a bit to allow the flavors to come together. Garnish with a lime slice and serve with tortilla chips.
