Apple Pecan Cookies
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- Pinch of salt
- 1 cup butter (melted)
- 1 cup brown sugar
- 2 eggs
- 2 tbsp applesauce
- 1 tsp vanilla
- 1/2 cup crushed pecans, plus whole pecans to top
- 4 tbsp Shasta Apple soda
- Powdered sugar and cinnamon to sprinkle on top
Directions
Preheat oven to 350ºF. Prepare a baking sheet lined with parchment paper. In a mixing bowl, add melted butter, sugar, eggs, vanilla, and applesauce and mix until combined. In a separate bowl, add all-purpose flour, baking soda, and salt and mix to combine. Add dry ingredients to wet ingredients. Add crushed pecans and Shasta Apple soda, and mix until combined. Scoop cookie dough on a parchment-lined baking sheet and add whole pecans on top of each cookie. Bake at 350ºF for 10-15 minutes. Let cookies cool and sprinkle cinnamon sugar on top. Enjoy this soon-to-be fall fav!
