Black Cherry Brownies
Ingredients
- 6 oz Shasta Black Cherry
- 1/3 cup & 2 tbsp cocoa powder
- 1/3 cup dark chocolate, chopped
- 12 oz pitted cherries, chopped
- 1/2 cup & 2 tsp flour
- 1 tsp vanilla
- 2 eggs
- 1/3 cup sugar
- 4 oz butter
- 1 scoop vanilla ice cream
- Black cherries and mint for garnish
Directions
Combine pitted and chopped cherries in a pan with 6 oz of Shasta Black Cherry soda. Boil until thickened, then set the cherry sauce aside. Divide into 3 equal parts once cooled. Purée and sieve 1 part of the sauce. Next, melt butter and combine with sugar, eggs, and vanilla in a medium bowl. Sieve and blend flour and cocoa powder. Combine dry ingredients with mixture in medium bowl. Fold in 1/3 of cherry sauce and 1/3 cup of chopped dark chocolate. Pour batter into an 8×8 pan lined with parchment paper. Top with 1/3 of cherry sauce, and swirl with a toothpick. Bake at 350°F for 28-30 minutes then allow to cool. Once cooled, cut brownie into slices. Stack 2 slices on a serving plate and top with 1 scoop of vanilla ice cream. Pour remaining puréed cherry sauce on top and garnish with fresh cherries and mint. Your Shasta Black Cherry Brownies are ready to be savored.
