Mini Bundt Cakes
Ingredients
For the cakes:
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup vegetable oil (plus extra for greasing)
- 2 eggs
- 1/3 cup cacao powder
- 2 tbsp honey
- 1/3 cup Shasta Zero Sugar Cho•Co•lat De•lite
For the chocolate drizzle:
- 1/3 cup dark chocolate, melted
- 1 tbsp Shasta Zero Sugar Cho•Co•lat De•lite
Directions
Preheat oven to 350°F. Lightly grease mini bundt pans (or a large cake pan) with vegetable oil. Mix flour and baking powder in a bowl. Add vanilla extract, vegetable oil, eggs, cacao powder, honey, and Shasta Zero Sugar Cho•Co•lat De•lite. Whisk until smooth. Pour batter evenly into the greased pans. Bake for 15 minutes (or 25–30 minutes for a large cake) until a toothpick inserted in the center comes out clean. Let cool completely. Melt dark chocolate and stir in Shasta Zero Sugar Cho•Co•lat De•lite until smooth. Drizzle chocolate over cooled cakes. Garnish with fresh fruits.
