Ginger Ale Glazed Salmon
Ingredients
- 1 cup of Shasta Ginger Ale
- 2 tbsp of soy sauce
- 1 tbsp of lime or lemon juice
- Salt to taste
- 2 tbsp chopped garlic
- 1 tsp of honey
- (2) 7 oz salmon filets
- 7-8 asparagus spears, blanched in salted water
- Steamed veggies (cauliflower, broccoli, and carrots)
- 2 lemon slices
- 1/2 lemon, broiled
- Chopped chives
Directions
In a small saucepan, combine Shasta Ginger Ale, soy sauce, lemon juice, salt, garlic, and honey, then bring to a boil. Reduce heat and simmer for 7-8 minutes until the glaze thickens. Preheat the oven to 350°F (175°C), place salmon on a lined baking sheet, season with salt, and brush with the glaze. Bake for 15-20 minutes, then broil for the last 1-2 minutes with half a lemon. While baking, blanch asparagus and steam cauliflower, broccoli, and carrots. Arrange asparagus on a plate, top with salmon, and add the steamed vegetables on the side. Garnish with lemon slices, charred lemon, and chopped chives.
