Diet Shasta Cola Chocolate Banana Muffins
Ingredients
- 1 cup whole wheat flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup coconut oil or butter
- 2 large eggs
- 3-4 ripe bananas
- 1/2 cup chocolate chips
- 3/4 cup crushed walnuts
- 1/2 cup Diet Shasta Cola
Directions
Preheat oven to 350º. In a large bowl, combine whole wheat flour, cocoa powder, baking soda, baking powder, and salt. In a separate bowl, microwave coconut oil or butter, then add eggs and mash in 3-4 ripe bananas. If your bananas are not ripe, add 1/4-1/2 cup honey. Combine the wet and dry ingredients. Mix in chocolate chips and crushed walnuts. Add Diet Shasta Cola to the bowl and mix. Line a cupcake tray with cupcake liners and fill 3/4 of the way with batter. Bake for 18-20 minutes until the center is no longer gooey. Remove from the oven and top with ice cream or sprinkles. Enjoy!
