Raspberry Crème Dream Trifle
- 1 and 1/2 cup all-purpose flour
- 1 cup sugar
- 1 tbsp baking powder
- Pinch of salt
- 2 large eggs
- 1/2 tsp vanilla
- 1/2 cup vegetable oil
- 1/2 cup and 1 tbsp Shasta Raspberry Creme soda, divided
- 1/2 cup and 1 tbsp raspberry puree, divided
- 2 cups whipped cream
- 1 cup fresh raspberries
- Mint to garnish
Preheat oven to 350ºF. Prepare two 8" round cake pans and lightly grease sides with non-stick cooking spray. In a mixing bowl, sieve all the dry ingredients. Add eggs, vanilla, vegetable oil, 1/2 cup of Shasta Raspberry Creme soda, and 1/4 cup raspberry puree and mix until smooth. Add milk if the mixture is too thick. Divide batter evenly between the prepared cake pans. Bake at 350ºF for 20-25 minutes, or until a toothpick comes out with a few moist crumbs. Let the cake cool completely and cut discs to the required shape and size of the trifle dish. In a separate bowl, combine whipped cream, remaining 2 tablespoons of raspberry puree, and 1 tablespoon Shasta Raspberry Creme Soda and fold in ingredients into a smooth mousse. In a trifle dish, assemble the trifle, layering 1 cake, 1/2 raspberry mousse, and fresh raspberries. Repeat each layer and garnish with mint. This delicious holiday recipe can be prepared ahead of time or just before the guests arrive. Enjoy!
