Dr. Shasta Chocolate Crinkle Cookies
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup Dr. Shasta
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- Powdered sugar for rolling
Whisk together eggs, cocoa powder, sugar, vegetable oil, and Dr. Shasta in a bowl until well combined. Stir in vanilla extract, baking powder, and a pinch of salt. Gradually mix in the flour, 2 tablespoons at a time, to create a thick batter. Chill the batter for 3-4 hours in the refrigerator. Preheat your oven to 350°F and prepare a baking sheet with parchment paper. Scoop small portions of the chilled batter, roll into balls, and then coat each ball in powdered sugar. (For easier handling, if the dough is too sticky, freeze it for 20-30 minutes and oil your hands before rolling). Place each ball on the baking sheet, ensuring space between each. Bake for 12-14 minutes until the cookies have crinkled and set. Allow them to cool slightly on the baking sheet before transferring to a wire rack to cool completely. Enjoy!
