Chocolate-Cherry Layer Cake
For the Cake:
- 1 box dark chocolate cake mix (15.25 oz)
- 1 cup Shasta Cherry Cola
- ½ cup vegetable oil*
- 3 eggs*
- 1 to 1½ cups cherry pie filling
For the Frosting:
- ½ cup (1 stick) butter, softened
- 2½ cups powdered sugar
- ½ cup cocoa powder
- Pinch of salt
- ½ tsp vanilla extract
- 1-2 tbsp Shasta Cherry Cola
Bake the Cake:
Preheat oven according to box instructions. Grease two 8-inch round cake pans. In a bowl, combine cake mix, eggs, oil, and Shasta Cherry Cola (instead of water). Mix until smooth. Divide evenly between pans and bake per box instructions. Cool completely.
Make the Frosting:
Beat butter until smooth and creamy. Add powdered sugar, cocoa powder, and salt, and mix until combined. Add vanilla extract and Shasta Cherry Cola, 1 tablespoon at a time, until frosting is smooth and spreadable.
Assemble the Cake:
Place one cake layer on a serving plate. Spread cherry pie filling evenly over the top, leaving a small border around the edge. Place the second cake layer on top. Frost the top and sides of the cake with the chocolate frosting. Garnish with cherries on top. Let cake set for 10–15 minutes before slicing and serving.
